Breakfast oats with Peaches

POSTED BY DELCIOUS.COM

When you wake up in the morning, Pooh," said Piglet at last, "what's the first thing you say to yourself?"
"What's for breakfast?" said Pooh. "What do you say, Piglet?"
"I say, I wonder what's going to happen today that is exciting?" said Piglet.

Pooh nodded thoughtfully. "It's the same thing," he said.”

Exactly Pooh!  Breakfast is my favourite meal.  Not because I am a lover of the egg and bacon fry up, but because breakfast is honest and reliable.  It arrives to meet my early morning appetite with cheer and punctuality and without it I am horribly cranky and miserable.  Setting off to conquer the day ahead is best done on a full stomach, and this five minute recipe to “Pimp up your Porridge” has Carpe Diem written all over it.

Ingredients

1 cup rolled oats
2 cups water
Pinch salt
1 x 410 g can Rhodes Peach slices in syrup
½ tsp. cinnamon
½ cup walnuts (or any nut of choice)
Honey to taste
Milk (optional)

  1. Bring the water and salt to the boil.
  2. Add the oats and stir constantly until thickened
  3. Lower the temperature and simmer for a few minutes more.
  4. Spoon into serving bowls.
  5. Top with Rhodes Peach slices, a sprinkle of cinnamon, nuts and a drizzle of honey.
  6. Serve with milk if using

Generally speaking ½ cup of rolled oats and 1 cup of water will be sufficient for one serving, so the above recipe will serve two.  Adjust accordingly for your requirements.
